Prime is superior grade of beef with amazing flavor, tenderness, juiciness and buttery texture. Only about 2 % of all beef produced is graded Prime. This is the cut from the loin section of the beef. Uniform in shape and less fatty than rib. The striploin roast is a good alternative to standing rib roast or ribeye roast. This roast would appeal to people who do not appreciate the fattier standing rib.
